Canopies

Commercial kitchen extract canopies

Stainless steel canopies designed around your cooking line and fabricated in our own workshop. Standard or completely bespoke, supplied and installed by our team, or supplied to the trade for you to fit.

What we make

Canopies built for the kitchen, not picked from a catalogue

Every canopy starts with the cooking line it sits over: the appliances, their heat and grease load, the ceiling height and what's above it. We draw it, calculate the extract and supply rates, then fold and weld it in our workshop to suit.

  • Wall canopies for cooking lines against a wall
  • Island canopies for back-to-back or freestanding suites
  • Front-of-house canopies for open kitchens, where finish and noise matter as much as performance
  • Low-ceiling and back-bar hoods where height is tight
  • Ventilated ceilings and combined systems for larger or mixed kitchens
  • Recirculation canopies where there is no route to outside, including our Circul8 unit

What's included as standard, and what can be added

Stainless steel construction

Food-safe, cleanable stainless steel, with fixings and seams detailed for hygiene.

Baffle grease filters

Removable baffle filters with grease collection, so grease does not build up in the plenum or drip back onto the cooking surface.

Sealed lighting

Lighting integrated into the canopy, sealed against grease and moisture.

Integrated supply air

Optional supply plenum built into the canopy, so replacement air is introduced at low velocity without draughts at the pass.

Gas interlock (where gas is used)

A separate system we can supply and install alongside the canopy, linking the gas supply to the ventilation. Gas interlock systems

Fire suppression ready

Prepared for canopy fire suppression, designed and installed with our specialist partner. Fire suppression

Design basis

Sized to the standards, not guessed

We design canopies to BESA DW/172 and the EMAQ+ best-practice guidance used by local authority environmental health officers. In practice that means:

Key sizing guidance (EMAQ+ best practice)
ItemGuidance
Overhang beyond equipmentAt least 250 mm on each free side
In front of combination ovens600 mm, to catch steam when doors open
Solid-fuel appliances300 mm beyond the door-open position
Capture velocity, light loading0.25 m/s (steamers, boiling pans, bains-marie)
Capture velocity, medium loading0.35 m/s (fryers, ranges, griddles)
Capture velocity, heavy loading0.5 m/s (chargrills, broilers)
Make-up airApproximately 85% of the extract rate

Questions

Kitchen canopy FAQs

How far should a kitchen canopy overhang the cooking equipment?

EMAQ+ best practice is at least 250 mm beyond the equipment on each free side, increased to 600 mm in front of combination ovens and 300 mm beyond the door-open position of solid-fuel appliances. Island canopies and draughty locations may need more.

How do you work out the extract rate for a canopy?

We calculate it from the appliances under the canopy and their heat and grease load, using capture velocities of around 0.25 m/s for light loading, 0.35 m/s for medium and 0.5 m/s for heavy loading such as chargrills, then check it against the room and the ductwork.

Do I need supply air as well as extract?

Yes, in almost every case. Without replacement air the extract cannot perform and the kitchen runs hot and under negative pressure. Best practice is make-up air of approximately 85% of the extract rate, delivered at low velocity, either through the canopy or a separate system.

Can you make non-standard sizes and shapes?

Yes. Because we fabricate in our own workshop, L-shaped runs, low ceilings, awkward bulkheads and front-of-house finishes are normal work rather than special orders.

Do you supply canopies to other installers?

Yes. We fabricate canopies, and supply ductwork, to your drawings or ours for catering equipment companies and contractors to install. See trade fabrication.
